The Miracle Noodles Stir Fry

A guilt free, heavenly, restaurent style dish you must try! 

Serving size – 2 

Prep time –  10 mins            Cooking time – 17 mins 

This spicy and meaty taste noodle stir fry is not just healthy, but also vegan and keto friendly, gluten free and provide lot of benefits to your body. It’s made with three main ingredients and done within 30 mins. 

The main ingredient, Shirataki noodles are low in calorie, high in soluble fibre and made just with Konjac flour and water. This noodle is very beneficial in weight management as glucomannan can absorb water to form a gel which helps to make you full for hours and acts as a prebiotic (food for probiotics) as well. With the addition of tofu, this dish becomes high in protein and soybean paste contributes with vitamins and minerals. So if you’re looking for guilt free, heavenly dish give this a try! 

What you need:

  • 1 pack (260 g) Konjack (Shirataki) noodles, drained 
  • 3 tablespoon sesame oil, divided
  • 1/2 pack (250 g) firm tofu, drained and cut into pieces
  • 1/3 cup red onion, chopped
  • 1 tablespoon fresh garlic, chopped
  • 1 tablespoon green / red chilli, chopped
  • 1/3 cup green onion, sliced 
  • 1 tablespoon sesame seeds (optional) 

For the sauce: 

  • 2 tablespoon soybean paste
  • 1 tablespoon tamari / soy sauce 
  • 11/2 – 2 tablespoon chilli flakes

Let’s make it: 

  1. Wash Shirataki noodles with normal water and add 2 cups of boiling water and let it sit for a minute and then drain. 
  2. Add soybean paste, tamari / soy sauce, chilli pieces and 1/3 cup of water into a bowl and mix it to make the sauce.
  3. Heat a pan on low to medium heat for about 20 seconds and then add 2 tablespoon sesame oil. 
  4. Add tofu into the pan and fry both sides for about 6 mins until they become light brown and crispy from outside. 
  5. Remove the fried tofu and add the remaining sesame oil into the same pan.
  6. Add onion, garlic, chilli and sauté for 1 minute on low to medium heat.  
  7. Then add Shirataki noodles and sauté for another 2 mins. 
  8. Add the sauce and sauté for 7 mins by throughly mixing to combine the sauce and the mixture. 
  9. Turn off the flame and add green onion and sesame seeds and serve. 

Tips:

  • Pat dry the tofu throughly with paper towels or tea towel to get rid of the excess water. This will make more crispier and evenly cooked tofu. 
  • Chilli pieces can be replaced by 1 tablespoon of Gochujang or sriracha.
