Easy Potato – Fish Filling For your Favourite Dish

Prep time – 10 minutes                   Cooking time – 12 minutes 

Fish buns, Fish rolls, Fish roti, Fish patty, and Fish cutlet are some of the well-known Sri Lankan snacks that everyone is craving. These are also famous as Sri Lankan street foods. Most of them are made with a filling of potato and fish (tuna) mix. 

This recipe is very easy to make and very handy. The dishes you can create with this filling are endless and can use as a meal prep when you have a party coming up. You can work around increasing the quantities to make batches and store them in the freezer until your next time of use. My mother’s this particular filling recipe is so flavourful and crowd-pleasing and I used to make it for years without any complaint. 

What you need: 

  • 2 tablespoons coconut oil 
  • 1/2 tablespoon mustard seeds 
  • 1 tablespoon garlic, minced 
  • 1/2 tablespoon ginger, minced
  • 2-3 cloves
  • 2-3 cardamom, cracked
  • 1/2 inch cinnamon stick
  • 1/2 cup onion, chopped
  • 1 tablespoon green chili, chopped
  • 1 tablespoon curry leaves, thinly sliced
  • 1-inch pandan leaves, thinly sliced
  • 1 1/2 tablespoons chili flakes, 
  • 1/2 tablespoon turmeric powder
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon roasted curry powder
  • 1 cup potato, mashed
  • 1 cup tuna, mashed
  • 1 1/3 tablespoons fine sea salt
  • 1/2 tablespoon black pepper powder
  • 1 1/2 tablespoon lime juice

Let’s make it: 

  1. Add oil to a pan and heat for about 1 minute on medium heat. 
  2. When the oil is sizzling, add mustard seeds and let them crack. 
  3. Add garlic, ginger, cloves, cardamom, and cinnamon, and let them start browning. 
  4. Then, add onion, green chilies, curry leaves, and Landon leaves and sauté for about 2 mins. 
  5. When they turn golden brown, add chili flakes, turmeric, chili powder, and curry powder and mix them together. 
  6. When it makes an oily paste, add potato, tuna, and salt. 
  7. Give it a good mix and cook for 6 – 7 minutes on low heat. 
  8. Add black pepper and cook for another minute. 
  9. Turn off the flame and add lime juice and mix everything together until combines well. 
  10. Let the mixture cool for about 10 minutes and use it as a filling in your favorite fish bun, fish roll, fish roti, or sandwich. 

Tips for you: 

  • Make sure to stir the mixture in between to prevent burning. 

Make ahead info: 

  • Boil and mash the potato. 
  • Mash the tuna (canned or cooked) without water.
