Soft, golden, and rich with buttery flavor — these homemade brioche buns are perfect for burgers, hot dogs, or any sandwich you love. With just one versatile dough, you can easily make both burger buns and hotdog buns that rival any bakery.

Ingredients You’ll Need

For the Brioche Dough

  • 1 teaspoon active dry yeast
  • 1 tablespoon sugar
  • ¾ cup warm milk
  • 300 g all-purpose flour
  • ½ teaspoon sea salt
  • 1 medium egg
  • 2 ½ tablespoons butter or margarine, divided
  • 1 egg yolk, for brushing

For the Paste (Tangzhong Method)

  • 50 g all-purpose flour
  • ½ cup water

Step-by-Step Instructions

Step 1: Make the Paste

In a small saucepan, whisk 50 g flour with ½ cup water. Cook over low heat, stirring until a smooth, thick paste forms. Let it cool completely before adding it to your dough.

This paste keeps the brioche soft and moist — a trick worth learning!

Step 2: Activate the Yeast

Combine warm milk, sugar, and yeast in a bowl. Let it sit for 10 – 15 minutes until foamy.

Step 3: Mix the Dough

In a large bowl or stand mixer, add flour, salt, egg, the cooled paste, and yeast mixture. Mix until combined, then add butter.
Knead for about 10 minutes, or until smooth and elastic.

💡 Pro Tip: This dough will be sticky — resist the urge to add more flour! Instead, butter your hands, dough scraper, and surface to handle it easily.

Step 4: First Rise

Cover the dough and let it rise in a warm spot for 1 – 2 hours, or until doubled in size.

Step 5: Shape the Buns

Divide into about 85 g portions:

  • Roll into round balls for burger buns
  • Shape into logs for hot dog buns
    Place them on a parchment-lined baking tray, leaving enough space between each piece.

Step 6: Second Rise

Cover and let the buns rise again for about 30 minutes, or until puffy.

Step 7: Brush & Bake

Preheat your oven to 350°F (175°C).
Brush each bun with egg yolk for a shiny, golden finish. Sprinkle some sesame seeds on the burger buns for that extra crunch and taste.
Bake for 30–35 minutes, or until golden brown on top.
