Creamy Barley – Onion Soup : A Dinner Special brownceylonesefoodjournal, February 1, 2023March 3, 2023 A comforting, nutritious, vegan soup comes in the shape of a bowl Serving size – 2 Prep. time- 10 mins, Cooking time – 30 mins A warm bowl of soup is my go to in winter season. It’s a great way to stay hydrated and full, at the same time very easy to make. This creamy and delicious soup is packed with dietary fibre, protein, antioxidants and vitamins. If you’re looking for something healthy and comforting this soup is just for you. What you need? 1/2 cup barley 2 tablespoon olive oil 1 tablespoon garlic, chopped 2 cups red onions, chopped 1/2 teaspoon dried Thyme 1 cup soy milk 1/2 vegetable bullion cube dissolved in 2 cups of water 1/2 teaspoon fine sea salt 1 teaspoon black pepper powder 1 tablespoon nutritional yeast Let’s begin.. Soak barley for 10 mins, clean and rinse for 2-3 times. Add olive oil into a pan and heat for around 15 sec. Next, add chopped garlic, onion and saute for 1 min. Add barley and saute everything for about 5 mins on low – medium heat. Then add thyme, soy milk, veg. broth, sea salt and mix well. Cook the mixture for about 20 mins on low – medium heat, until barley gets mushy. Make sure to stir in between to prevent burning. Add black pepper powder and nutritional yeast and turn off the flame. Use a hand blender to mash the mixture. Finally, sprinkle some more nutritional yeast on top and enjoy while it’s still hot. Tips for you : You can swap soy milk with any other plant based milk of your choice. If you’re using a regular blender, make sure to let the hot soup sit for about 5-10 mins until it’s ready to blend. You can pair this up with a toast of your choice, but it’s totally optional.
